Chicken Broccoli Casserole
Ingredients:
⁃3 Chicken Breasts
⁃Broccoli (bag in the frozen section of local grocery store)
⁃Rice A Roni (chicken flavor)
⁃8 oz of Sour cream
⁃Cheddar cheese
Instructions:
- Boil chicken breasts. The total time should take 30-40 minutes.
2. Preheat the oven to 350 degrees.
3. Steam broccoli until moistened. Drain the water.
4. Make rice-a-Roni according to the box.
5. Add ingredients to a 9×13 baking dish.
6. Mix in sour cream and spread through evenly.
7. Top off with cheese to your liking.
Bake for 20 minutes until the cheese is melted.
Biscuit and Gravy Casserole
Ingredients:
⁃ 8 count store-bought biscuits
⁃American cheese
⁃2 Tablespoons Salted butter
⁃7 eggs
⁃1/4 cup All-purpose flour
⁃2 1/2 cups Milk
⁃Sausage or bacon (your preference)
If you use sausage, buy it from the meat section at your local grocery store. About a pound will suffice.
⁃1/2 teaspoon of salt
⁃1/2 teaspoon of pepper
⁃1/4 teaspoon of garlic salt
Instructions:
- Cut each biscuit into 4 slices making an X.
2. Use a 9×13 baking dish and add butter or canola oil spray to grease it.
3. Cook your sausage or bacon and remove it to the plate when it is finished. Sprinkle it over the biscuits evenly. Leave a 1/4 of a cup behind in the pan for the gravy mix along with a little grease.
4. Preheat oven to 350 degrees.
5. Add 1/4 of All-purpose flour and 2 TBS of butter to the pan. Stir together until it bubbles up for 2-3 minutes.
6. Add 2 cups of milk to the pan to make your gravy. Next, add salt, pepper, and garlic powder. Let it simmer until it thickens, but is still a little runny.
7. Whisk the eggs together with the last 1/2 cup of milk. Add salt and pepper to taste.
8. Add the egg mixture on top of the biscuits. Then, pour the gravy and add the cheese sprinkled lightly over the top to taste.
Green Chicken Enchiladas
Ingredients:
⁃Tortillas (Tortilla land brand)
⁃Mozzarella cheese
⁃2 chicken breasts
⁃8 oz. Whipping cream
⁃Green enchilada sauce (Las Palmas Green Chile Enchilada Sauce- Mild)
Instructions:
- Boil chicken breasts (a rotisserie chicken works too). The total time should take 30-40 minutes.
2. Heat 9-12 tortillas until cooked evenly and set tortilla aside. Preheat oven to 350 degrees.
3. Shred chicken with hands or hand mixer.
4. Pour green sauce on a plate and dip both sides of the tortilla in the sauce.
5. Roll each tortilla with the chicken and cheese.
6. Place tortilla in 9×13 baking dish. Once all tortillas are in the dish, pour the rest of the green sauce over the enchiladas.
7. Lastly, pour over the whipping cream and lightly sprinkle cheese evenly on top.
Place the enchiladas in the oven for 15-20 minutes until cheese is melted evenly.
